Chef Ryan began cooking professionally in 2012. In 2017, Ryan and his wife Jessica made the decision to leave New York and move to Austin. Shortly after arriving, Ryan began to work for The Peached Tortilla. During his one and half years there, Ryan became inspired by owner Eric Silverstein’s own story and it sparked the idea to open a breakfast sandwich trailer. In 2019 that dream became a reality.
With inspirations from Texas and New York, Ryan utilizes his culinary background to make breakfast items everyone can enjoy. Many of the sandwiches feature pickles, and when remarked upon Ryan makes no secret that it is all thanks to the pickling recipe his wife created.
Ryan is continuously experimenting with new ideas and flavors, which means you will find there’s always something new on the menu.
